The journey of a coffee bean is a long and complex one. The coffee bean goes through a number of stages and during this period it spoils our tuning into delicious coffee. The ruined beans could turn a whole coffee container taste like bitter urine. Yes, you read it correctly.

On the other hand, specialty coffee guarantees quality throughout the production stages from bean to cup.
What’s more, the specialty coffee is good for you in many ways besides its taste. You may have gone through studies regarding the health benefits of coffee from reduced risk of various cancers, Alzheimer’s, dementia to diabetes. On the other hand, regular coffee consumption can lead to worst side effects that affect your body from head to toe.
So how would you choose your coffee now? How would you know if you are getting regular or specialty coffee? There is only one way to understand this and that is to understand the details of the production of the coffee from seeding to brewing.
Growth and Processing
It starts with a coffee bean, the same seed from which your coffee is brewed. To begin with, unprocessed coffee beans are planted which must be of high quality and must be planted at the right time in the right place for the production of high quality coffee. There are two groups of coffee Robusta and Softer Arabica, but they are easy to grow. In general, all types of specialty coffee are produced from the highest quality Arabica seeds.
After three to four years, the coffee tree gives its first fruit ie coffee beans that can be harvested. Coffee beans are generally hand-picked by hand picking or strip picking. Stripping is done quickly but it means picking all the berries from the trees at the same time. Selective selection takes more time but the results are better as only the beans close to maturity are picked and raw beans are left.
After the collection stage comes the processing stage. This must be done as soon as possible to avoid spoilage. There are three ways of processing the coffee beans, Wet, Semi and Dry
In the dry method, we spread coffee beans to dry on a larger surface under the sun. In the wet method, the coffee bean pulp is removed and we keep the beans to ferment in the tanks. After that we wash them with water. This is the most critical processing step where most mistakes are made. Poor fermentation and washing can lead to a bad bitter taste on the coffee that cannot be removed later.
After drying the coffee beans, we separate them according to weight and size. In this process, we remove all the bad color and damaged seeds. It is important to get rid of the poor quality beans as they can ruin your whole coffee with the addition of sour vinegar as a flavor. After separation, the green coffee beans are kept ion sisal or jute bags to be transported for roasting.
When the coffee beans arrive to be roasted, we test them for color. The taster also known as the cup details the quality. Immediately after visual approval, the roasting, smelling, brewing, slurping and quality test is done, which is again approved by a cupper to start roasting the rest of the beans.
We roast beans at around 230-260 degrees celsius. We keep the beans moving while they are roasted. When the internal temperature is reached to 230 Degrees, the bean oil emerges. The beans change color from green to brown and the coffee beans reach the highest level of aroma. After the process is complete, the beans are placed to cool by air or water. Now the beans are ready to brew for 2-30 days as the aroma starts to fade after that. Higher quality specialty coffee most of the time gives excellent taste even after the specified time but the regular coffee is hopeless.
Grinding And Brewing
The beans can be bought whole or we can grind them. Although ground beans make a huge difference while extracting all the flavor in no time for a perfect cup of coffee. We grind the beans finer for espresso and keep them coarser for filter brewing.
