Lasagna has to be one of the most delightful dishes in the Italian repertoire. However, Lasagna, unlike most Italian dishes, is not a simple preparation. Lasagna is a carefully planned assembly. It was only later, after going through a period when tomatoes were believed to be an aphrodisiac, that tomatoes found their way to the table, especially in Naples and Southern Italy. From what I have found, the first printed recipe with tomatoes appears in 1692. If lasagna as we know it today contains tomatoes, then it would not have been known in its current form until somewhere around 1700. My guess would be that lasagna as we know it today may not have ancient roots but may very well be a dish that was reinvented much later.

So, what about lasagna as we know it today? Some of the earliest references appear to date from the 17th century. One of the most interesting sites I found argues that traditional lasagna is a folk dish based on the most basic pork products For many, pork was the main source of meat. The pig would be killed in the winter. The best parts would go to the “patrone,” the landlord. The peasants would be left with the offal, the innards and other bits and pieces. From the remains that had some measurable meat, the peasants would make sausages. From the bony portions they created the base of the tomato sauce (what we called gravy).

My research on lasagna took me in many directions. I even went back to my cookbook library to re-research my 1988, former celebrity chef, Giulio Bugialli “On Pasta.” It seems that lasagna takes a different form not only in the different provinces of Italy but in the variety of each household. Some lasagnas are meat based, others are based on green vegetables such as artichokes or endive. Some people, like my relatives, add hard boiled eggs and peas; others do not. In the end, what goes between the layers of pasta is as varied as the things you can find to put in between. Yes, what we know in America has cousins ​​in Italy. There’s nothing quite like strips of pasta entwined with lovely ricotta and meat sauce. But there are also vegetarian-based lasagnas, such as a wonderful lasagna with artichokes.

The recipe I eventually settled on is a compromise of my family traditions, the wisdom of Bugialli, and countless googled websites. In recognition of what seems to be one of the basic elements of lasagna, I have used ground pork and pork sausage as a meat base. For the cheeses, I have chosen those found in Campania: ricotta, percorino romano and scarmorzza. Scamorzza is a solid cheese found in Southern Italy. Lasagna is not a simple recipe. You can’t do it as a 30 minute meal. It takes time, time and time. Achieving a recipe like this says why lasagna was just a holiday meal.
